Ingredients

  • 1 dash black pepper
  • 1 dash salt
  • 2 tbsps olive oil
  • 6 cups chicken stock
  • 3 tbsps chopped chives
  • 6 leeks, washed and chopped
  • 1 medium onion, finely chopped
  • 8 medium potatoes, peeled and chopped

Directions

  • Heat olive oil in a pot. Cook onions and leeks for 5 minutes, or until glassy.
  • Add potatoes and stock. Bring to the boil.
  • Reduce heat, cover and simmer for 20 minutes, or until potato is soft.
  • Blend. Season with salt and pepper.
  • Garnish with chives.
