Ingredients

  • 1/2 tbsp vegetable oil
  • 1/2 tsp ground mixed herbs
  • 2 low sodium bouillon cubes
  • 2 medium carrots
  • 1 medium onion
  • 4 medium potatoes
  • 33 fl oz water

Directions

  • Cut up the onion and fry in the oil until brown.
  • Add the water and stock cubes. Add the potatoes and carrots and mix.
  • Bring to the boil and simmer for 30 minutes. When vegetables are soft liquidize.
  • Serve with sprinkle of mixed herbs on top.
