Ingredients
- 1 medium onion
- 1/2 tbsp vegetable oil
- 4 medium potatoes
- 2 medium carrots
- 2 low sodium bouillon cubes
- 33 fl oz water
- 1/2 tsp ground mixed herbs
Directions
- Cut up the onion and fry in the oil until brown.
- Add the water and stock cubes. Add the potatoes and carrots and mix.
- Bring to the boil and simmer for 30 minutes. When vegetables are soft liquidize.
- Serve with sprinkle of mixed herbs on top.
