- 4 small red potatoes
- 8 oz green string beans
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1 tsp crushed red pepper flakes
- 2 cloves garlic
- 1 cup diced tomatoes with basil, garlic & oregano
Directions
- Par boil potatoes and green beans. Drain well.
- Saute in olive oil with garlic.
- Add diced tomatoes, salt, pepper and red pepper flakes.
- Simmer for 30-60 minutes.
