  • 4 small red potatoes
  • 8 oz green string beans
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp crushed red pepper flakes
  • 2 cloves garlic
  • 1 cup diced tomatoes with basil, garlic & oregano

Directions

  • Par boil potatoes and green beans. Drain well.
  • Saute in olive oil with garlic.
  • Add diced tomatoes, salt, pepper and red pepper flakes.
  • Simmer for 30-60 minutes.
