  • 3 tbsps chopped shallots
  • 1 tbsp olive oil
  • 6 fl oz dry white wine
  • 1 lb large prawns (shrimp)
  • 2 tbsps green peppercorns
  • 2 oz crème fraîche (or sour cream)

Directions

  • Sauté the shallots in olive oil in a large saucepan.
  • Add white wine and simmer for 3 minutes.
  • Add the prawns and cook over a high heat for 5 minutes.
  • Remove the prawns and set them aside.
  • Add peppercorns to the cooking sauce and reduce in volume by half. Reduce the heat and add crème fraîche, cooking for 2 minutes.
  • Peel the prawns, removing the head. Add the prawn tails to hte sauce.
  • Heat gently for 3 minutes before serving.
