Ingredients
- 3 tbsps chopped shallots
- 1 tbsp olive oil
- 6 fl oz dry white wine
- 1 lb large prawns (shrimp)
- 2 tbsps green peppercorns
- 2 oz crème fraîche (or sour cream)
Directions
- Sauté the shallots in olive oil in a large saucepan.
- Add white wine and simmer for 3 minutes.
- Add the prawns and cook over a high heat for 5 minutes.
- Remove the prawns and set them aside.
- Add peppercorns to the cooking sauce and reduce in volume by half. Reduce the heat and add crème fraîche, cooking for 2 minutes.
- Peel the prawns, removing the head. Add the prawn tails to hte sauce.
- Heat gently for 3 minutes before serving.
