  • 1 cup egg beaters
  • 1 tbsp pumpkin pie spice
  • 1 tsp salt
  • 1 cup applesauce
  • 2 cups pumpkin
  • 1/2 cup water
  • 2 tsps baking soda
  • 1 1/2 cups packed brown sugar
  • 3 cups whole wheat pastry flour

Directions

  • Pre-heat oven to 350 °F (175 °C).
  • In large bowl combine flour, salt, sugar, spice and baking soda. Set aside.
  • In another bowl combine, applesauce, pumpkin, egg substitute and water.
  • Combine pumpkin mixture with dry ingredients.
  • Bake in loaf pan for appropriately 50-60 minutes.
  • If using plain whole wheat flour instead of whole wheat pastry flour, use a little less.
  • Note: recipe will make 2 loaves, for better portion control use muffin tins instead of loaves.
