- 1 cup 100% pure pumpkin puree
- 2.5 g coarse kosher salt
- 1 tsp vanilla extract
- 1/4 tsp cloves (ground)
- 61 g greek vanilla yogurt
- 213 g all purpose flour
- 6 tbsps virgin coconut oil
- 1 tsp baking soda
- 2 large eggs
- 1 1/2 tsps cinnamon
- 1 tsp allspice ground
- 1/2 tsp nutmeg (ground)
- 2 g baking powder
- 1/2 cup honey
Directions
- Preheat oven to 350°F.
- Melt coconut oil in a large bowl. Whisk in honey and pumpkin, then eggs, yogurt, and vanilla.
- Mic dry ingredients in a separate bowl.
- Combine the two mixtures with a spatula.
- Divide into muffin cups and bake for 15-20 minutes.
- Cool the muffin tin on a wire rack for 10 minutes, then remove from tin and allow to cool completely.
