  • 1 cup canned pumpkin
  • 1 1/2 cups oats
  • 1 tbsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp sea salt
  • 1/2 cup egg whites
  • 1/4 cup honey
  • 4 oz applesauce

Directions

  • Preheat oven to 350 °F (175 °C). Line muffin pan with liners.
  • Combine dry ingredients in large bowl.
  • Combine wet ingredients in small bowl.
  • Fold wet ingredients into dry ingredients, taking caution to not over mix.
  • Scoop by spoonful's into lined muffin tins, distributing evenly.
  • Bake for 20-25 minutes until toothpick comes out clean. Let cool and enjoy.
