- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 dash salt
- 3 tbsps butter
- 1/4 cup unpacked brown sugar
- 1/4 cup whole wheat flour
- 1/2 cup 100% pure pumpkin
- 2 tsps pumpkin pie spice
- 1/4 cup whole milk
- 1 tbsp avocado vegetable oil
- 1 cup dry old fashioned oats
- 2 large eggs
Directions
- Preheat oven to 350°F.
- Mix flour, brown sugar, cinnamon, salt, and butter. Set aside for topping.
- Mix remaining ingredients in blender until smooth.
- Pour batter evenly in muffin cups. Sprinkle topping on top of each cup.
- Bake for 15 min or until toothpick comes out clean.
