  • 2 tbsps olive oil
  • 1 small onion, chopped
  • 1/2 cup minced fresh ginger
  • 3 medium pears, peeled, cored and sliced thin
  • 2 cups pumpkin puree
  • 1/4 tbsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 4 cups 99% fat free chicken broth

Directions

  • Put first four ingredients in a large soup pot and sauté until tender, about 10 minutes.
  • Stir in remaining ingredients and bring to a boil, then reduce heat and simmer for 20 minutes.
  • Puree in batches in a blender or use a stick blender to blend until soup is smooth.
