- 2 1/2 cups flour
- 1/4 cup brown sugar
- 2 tsps baking powder
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 2 tsps ground cinnamon
- 1 tsp ground ginger
- 2 large eggs
- 1 cup canned pumpkin
- 2 cups skim milk
- 6 tbsps liquid egg whites
Directions
- Mix the dry ingredients with a whisk.
- Add remaining ingredients and mix well.
- Let batter sit for 15 minutes. Heat up waffle maker.
- Using a 1/4 cup measure, pour batter into each mold - cook for 4-6 minutes, or until desired consistency.
- Serve with fresh fruit and pancake syrup.
