Ingredients

  • 1 tsp garlic powder
  • 3 tbsps red wine vinegar
  • 15 oz garbanzo beans
  • 15 oz canned black beans (no salt added)
  • 1 medium red bell pepper
  • 1 1/3 cups organic cooked quinoa
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tbsp salt
  • 1/2 cup olive oil
  • 4 limes
  • 2 stalks medium celery
  • 1/4 cup cilantro (coriander)
  • 1 1/4 cups chopped onions
  • 1 jalapeño pepper
  • 3 tsps granulated sugar

Directions

  • Cook quinoa as directed on packaging. Let it cool.
  • Wash and dice all vegetables.
  • Open and rinse canned beans.
  • Mix quinoa, onions, beans, peppers, celery, and cilantro.
  • Slice and squeeze limes to get juice.
  • Make dressing by combining olive oil, red wine vinegar, lime juice, salt, sugar and spices. Pour over quinoa mixture then serve.
