  • 2 tbsp flax seed
  • 2 large eggs
  • 1 1/2 cups all purpose flour
  • 3 cups raisin bran
  • 1 3/4 cups 2% reduced fat milk
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup fat free margarine
  • 5 1/2 tsps baking powder
  • 1/2 cup honey

Directions

  • Pre-heat oven to 400 °F (200 °C).
  • Mix together the all-purpose flour, baking powder, cinnamon and salt.
  • Pour milk over raisin bran, let stand to get soft (5-8 minutes), stir in eggs, honey and butter.
  • Add dry ingredients and stir until well mixed (about 2 minutes with electric mixer on medium.)
  • Spoon batter into muffin cups, makes about 18.
  • Bake for 18-20 minutes or until golden brown.
