  • 1/4 cup sugar
  • 2 large eggs
  • 1 cup skim milk
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 tbsps margarine
  • 1/2 cup rice

Directions

  • Cook rice.
  • Beat eggs, add sugar to taste, and vanilla. Add scalded milk.
  • Put a tablespoon of margarine (or butter)into casserole, melt in oven.
  • Pour in rice and egg mixture. Should be quite soupy.
  • Add second tablespoon of margarine, sprinkle with cinnamon and sugar mix.
  • Bake for 20-30 minutes until knife comes out clean.
  • Serve with a little milk and additional cinnamon/sugar mix if needed.
