Ingredients

  • 1/2 lb asparagus (1 bunch)
  • 3 small red potatoes
  • 1/3 small red onion
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar

Directions

  • Chop ends off of asparagus.
  • Mix all vegetables in little olive oil and balsamic vinegar (optional).
  • Put in a 8x8" or 9x13" baking dish, depending on how many vegetables you have.
  • Bake in 450 °F (220 °C) oven for about 30 minutes until done.
  • Note: you can use any assortment of vegetables you like, with or without potatoes.
