Ingredients

  • 2 lbs butternut squash
  • 2 tbsps honey
  • 4 tsps unpacked brown sugar
  • 2 cloves garlic, smashed and chopped
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsps olive oil

Directions

  • Peel and chop squash into 2" cubes and put in a bowl.
  • Add all other ingredients and toss.
  • Spray a cookie sheet with non-stick cooking spray.
  • Put the tray near the bottom of the oven and roast at 350 °F (175 °C) until tender, about 30 - 60 minutes.
