  • 2 5" long sweet potatoes, peeled and cut in 1" chunks
  • 2 medium sweet onions, cut in 1" chunks
  • 3 tbsps olive oil
  • 2 oz orange juice
  • 1/2 tsp leaves thyme
  • 1 dash salt
  • 1 dash pepper
  • 1/4 cup sliced almonds, toasted

Directions

  • Heat oven to 425 °F (210 °C).
  • Toss first 6 ingredients in a shallow medium-sized baking dish.
  • Cover; bake 30 minutes. Uncover; bake 20 minutes more.
  • Sprinkle with almonds.
