- 2 5" long sweet potatoes, peeled and cut in 1" chunks
- 2 medium sweet onions, cut in 1" chunks
- 3 tbsps olive oil
- 2 oz orange juice
- 1/2 tsp leaves thyme
- 1 dash salt
- 1 dash pepper
- 1/4 cup sliced almonds, toasted
Directions
- Heat oven to 425 °F (210 °C).
- Toss first 6 ingredients in a shallow medium-sized baking dish.
- Cover; bake 30 minutes. Uncover; bake 20 minutes more.
- Sprinkle with almonds.
