A great cajun recipe featuring shrimp and crawfish.

Ingredients
- 2 cups sliced bell peppers (yellow, red, green)
- 2 stalks large celery, chopped
- 2 plum ,seeded and diced
- 1/2 medium onion, diced
- 1 tsp tabasco sauce, to taste
- 1 tbsp cajun seasoning, to taste
- 2 cloves garlic
- 3 tbsps olive oil
- 8 medium shrimp, peeled and deveined
- 8 (crawfish)
- 14 1/2 oz cocount milk, unsweetned
Directions
- In olive oil, sauté the bell peppers, celery, tomatoes, onions, tabasco sauce, cajun seasoning, garlic the way you prefer.
- Cook the shrimp and crawfish in separate skillets. If you have a lot of red juice, reserve.
- Add shrimp and crawfish to the vegetable medley and any juices.
- Add the cocount milk. Bring to a rapid boil until thick and creamy.
- Note: you can cut the amount of crawfish and double the shrimp and vice-versa.
