Shrimp and Vegetable Pasta

Ingredients

  • 8 g fat free parmesan cheese
  • 1 tsp leaves basil
  • 1 tsp leaves oregano
  • 1 tbsp parsley
  • 1 tbsp olive oil
  • 2 tbsps margarine
  • 1 cup chopped broccoli
  • 8 large mushrooms
  • 1 cup chopped mixed bell peppers
  • 32 medium shrimp
  • 8 oz wheat pasta

Directions

  • Cook pasta as per package instructions.
  • Cook shrimp in a separate skillet or bake in oven (if not precooked).
  • In a skillet, heat olive oil and sauté mushrooms and broccoli.
  • Add peppers and stir. Vegetables should be crisp but cooked. Add basil and oregano.
  • When pasta is cooked, drain well and return to pot.
  • Add margarine and stir.
  • Portion pasta to plates, spoon out the vegetables and shrimp and sprinkle with parmesan cheese. Add parsley.
