Ingredients

  • 1 large onion, sliced
  • 2 tbsps olive oil
  • 3 cloves garlic
  • 14 1/2 oz tomatoes
  • 1 tsp pepper
  • 1 tsp salt
  • 16 oz shrimp
  • 1 tsp red pepper flakes
  • 1 tbsp leaves basil
  • 1 tbsp parsley
  • 1/4 tsp ground dried oregano
  • 1 cup chicken broth

Directions

  • Toss shrimp with salt, pepper and pepper flakes.
  • Heat the olive oil in a skillet, add shrimp and sauté until just cooked through (2-4 minutes). Transfer cooked shrimp to a bowl.
  • Add onion to skillet, sauté until translucent (4-5 minutes).
  • Add tomato (with juices), chicken broth, garlic and oregano. Simmer until the sauce starts to thicken (8-12 minutes).
  • Return shrimp and any juices that have accumulated in the bowl to the skillet/sauce. Toss and cook for about 2 minutes. Stir in basil and parsley.
  • Serve and enjoy.
