Ingredients

  • 4 large eggs
  • 4 tbsp heavy cream
  • 1/2 cup chopped green peppers
  • 16 medium shrimp
  • 1/4 cup sliced squash
  • 1/4 cup sliced zucchini squash

Directions

  • Whisk eggs and cream together.
  • Chop green peppers, slice squash and zucchini. Take tails off shrimp.
  • Put the shrimp and peppers into the egg mixture.
  • Arrange squash and zucchini on bottom of buttered pie dish (glass works best), pour egg and pepper mixture over it.
  • Bake for 40 minutes at 325 °F (160 °C) or until firm and slightly browned around the edges.
