Shrimp with Zucchini
This meal goes together quickly using pre-cooked shrimp, and is also yummy over pasta.

Ingredients
- 2 tbsps olive oil
- 1/2 cup chopped onion
- 4 cloves garlic
- 2 medium zucchini
- 15 medium shrimp
- 1/4 cup grated parmesean cheese
- 1/2 cup pieces or slices fresh mushrooms
Directions
- Heat olive oil in fry pan.
- Add chopped onion and minced garlic cloves. Cook until softened.
- Peel zucchini and slice lenghwise, then slice into 1/4" slices. Add to onion and garlic mixture. Cook until tender-crisp.
- Add sliced mushrooms and cook until soft. Then add thawed cooked shrimp. Heat only until shrimp is hot.
- Top with cheese and serve with green salad.
- Note: great for Phase 2 and 3 of South Beach.
