- 15.5 oz pinto beans
- 15.25 oz black beans
- 1 1/2 lbs boneless skinless chicken breast
- 1 tbsp chili powder
- 1.25 oz package 40% less sodium taco seasoning mix
- 10 oz diced tomatoes & green chilies
- 10.8 oz super sweet corn
- 8 oz no tomato sauce no salt added
- 1 cup low sodium chicken broth
Directions
- Combine all ingredients (except chicken) in a slow cooker and mix well. Place chicken breasts on the top, and press them down slightly.
- Cook on low for 10 hours or on high for 6 hours. 30 minutes before serving, remove chicken and shred.
- Return shredded chicken to slow cooker, and mix everything together. If desired top with cilantro before serving.
