Ingredients

  • 1 second olive oil cooking spray
  • 4 cups sliced squash
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 1/4 cup cornmeal

Directions

  • Place iron skillet on stove and get pan hot.
  • Wash and rinse squash. Slice squash in rounds, as thick as you like.
  • Place in a gallon Ziploc bag. Add salt, pepper, and olive oil spray to slightly coat.
  • Add cornmeal and shake the bag, coating the squash.
  • Pour into hot skillet. Cook, flipping the squash occasionally, until squash is browned and cooked down.
