  • 2 cups cottage cheese, low fat
  • 12 oz salsa
  • 10 servings 2 slices chicken breast, diced
  • 6 corn tortillas, cut into squares
  • 12 oz black beans
  • 16 oz mexican blend shredded cheddar cheese, low fat

Directions

  • Spray casserole dish with cooking spray like Pam.
  • Layer the bottom with the tortilla squares.
  • Layer next with diced chicken.
  • Mix together cottage cheese, black beans and salsa.
  • Pour mixture over the chicken layer.
  • Make the top layer the cheese.
  • Bake in oven at 350° F (175° C) for 30 minutes.
