  • 8 large eggs
  • 1 medium baked sweetpotato (peel not eaten)
  • 1 tbsp extra virgin olive oil
  • 1/2 cup diced canned tomatoes
  • 1/2 tsp black pepper seasoned salt
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 medium bell pepper
  • 1 tsp dark chili powder
  • 1 tsp cumin
  • 1/4 cup water
  • 1 cup chopped onions
  • 3/4 cup unsweetened oat milk

Directions

  • Preheat oven 350°F and spray 8”x8” baking dish with cooking spray.
  • Put olive oil in a large skillet over medium high heat.
  • Add diced sweet potatoes and water. Cook for 6-8 minutes or until the water evaporates, then add onions and bell peppers.
  • Cook for 5 minutes until vegetables are soft. Remove from heat and set aside.
  • Whisk together milk, eggs, and spices.
  • Fold in cooked vegetables and drained diced tomatoes.
  • Pour egg mixture into the baking dish and cook for 45-50 minutes or until the egg has set in the middle.
  • Slice into squares and serve warm or hot.
