- 8 large eggs
- 1 medium baked sweetpotato (peel not eaten)
- 1 tbsp extra virgin olive oil
- 1/2 cup diced canned tomatoes
- 1/2 tsp black pepper seasoned salt
- 1 tsp salt
- 1 tsp garlic powder
- 1 medium bell pepper
- 1 tsp cumin
- 1/4 cup water
- 1 cup chopped onions
- 1 tsp dark chili powder
- 3/4 cup unsweetened oat milk
Directions
- Preheat oven 350°F and spray 8”x8” baking dish with cooking spray.
- Put olive oil in a large skillet over medium high heat.
- Add diced sweet potatoes and water. Cook for 6-8 minutes or until the water evaporates, then add onions and bell peppers.
- Cook for 5 minutes until vegetables are soft. Remove from heat and set aside.
- Whisk together milk, eggs, and spices.
- Fold in cooked vegetables and drained diced tomatoes.
- Pour egg mixture into the baking dish and cook for 45-50 minutes or until the egg has set in the middle.
- Slice into squares and serve warm or hot.
