Ingredients

  • 2 skinless chicken thighs
  • 6 cups spaghetti winter squash
  • 16 oz cooked ground beef
  • 1 cup yellow onions, chopped
  • 1 cup reduced fat cream cheese
  • 1 cup Mexican style blend cheese
  • 6 slices thick sliced bacon

Directions

  • Pre-cook squash, chicken, ground beef and bacon. Dice and sauté onions.
  • In casserole dish, layer out chicken pieces. Cover with spaghetti squash.
  • In bowl mix ground beef, onions, half of cream cheese, and half of shredded cheese.
  • Combine beef mix on top of spaghetti squash. Separate remaining cream cheese into six slices and place evenly over beef mix.
  • Cover with remaining shredded cheese. Bake at 400 °F (205 °C) for 30 minutes. Top with crumbled bacon.
