  • 3 lbs spaghetti squash
  • 2 cups marinara sauce
  • 2 tbsps olive oil
  • 1 tsp kosher salt
  • 1 tsp fresh ground pepper
  • 4 tbsps fresh parmesan cheese, grated

Directions

  • Cut squash in half and remove seeds. Scrape seeds, drizzle with olive oil and sprinkle with salt and pepper.
  • Roast squash at 375° F (200° C) until you can insert a knife without resistance, about 35 to 45 minutes.
  • With a fork remove squash, should look like spaghetti.
  • Plate, pour marinara sauce over squash and add parmesan. Enjoy.
