Ingredients
- 0.12 tsp ground mixed spice
- 0.12 tsp brownulated brown sugar
- 3 1/2 oz chicken breast, finely sliced
- 0.12 tsp spray oil
- 1/4 cup green beans, halved
- 1 small courgette (zucchini), sliced
- 2 1/2 oz chicken stock
- 2 oz couscous
- 3 1/2 oz vegetable stock
- 1 wedge or slice lemon
Directions
- Combine the spice and sugar, add the chicken and toss until well coated.
- Spray a non-stick frying pan lightly with oil and when hot, add the chicken. Stir-fry over medium-high heat for 5-8 minutes or until golden brown and cooked through.
- Stir in the chicken stock, beans and courgette and bubble gently for 1-2 minutes.
- Meanwhile, put the couscous into a small saucepan and pour the hot vegetable stock over. Stir and heat gently until the stock has been absorbed.
- Serve the chicken on the couscous with the lemon wedge to squeeze over.
