Ingredients

  • 1 tsp pepper
  • 1 tsp salt
  • 1 tbsp vegetable oil
  • 0.12 cup spicy tomatoes
  • 1 cup brown rice
  • 14 oz black-eyed peas

Directions

  • Microwave rice and set aside.
  • Mix salt, pepper and oil with peas, microwave.
  • Plate a cup of brown rice and layer about 1/2 cup of the peas mixture and top off with chilled spicy tomatoes (such as Rotel).
  • Note: field peas and snaps are pretty much black-eyed peas, but with green beans mixed in.
