Ingredients

  • 1 bunch spinach
  • 1/2 large red onion
  • 3 plum tomatoes
  • 4 oz prosciutto
  • 2 large eggs
  • 8 oz fat free sour cream
  • 1 oz gouda cheese
  • 1/2 tsp thyme
  • 1 tsp rosemary
  • 2 tbsps parsley
  • 1 tsp celery salt
  • 1 tsp season salt
  • 1 tsp olive oil

Directions

  • Sauté spinach and onions in olive oil until wilted. Place in bottom of a casserole.
  • Cube tomatoes, prosciutto, and add to the casserole in layers.
  • Mix eggs, sour cream and spices to form a custard. Pour over the casserole and spread evenly. Use a spoon handle to help the custard penetrate the layers but avoid stirring.
  • Grate cheese and sprinkle on top or spread slices evenly.
  • Bake at 350 °F (175 °C) for 30-45 minutes or until a toothpick inserted pulls out clean.
  • Let cool before slicing.
