Ingredients

  • 1/4 cup chopped white onion
  • 3 cups spinach
  • 2 large egg whites
  • 2 tbsp enchilada sauce
  • 1 tsp olive oil

Directions

  • Heat the pan with olive oil or butter.
  • Sauté onions till tender, then add spinach and sauté until soggy.
  • Add enchilada sauce or pato tomato sauce depending on your taste.
  • Scramble in the 2 egg whites until done.
  • Salt and pepper to taste.
  • Note: if permitted by your diet you can even add cheese.
