Spinach Mushroom Bacon Salad

Ingredients

  • 3 tsps or 1 packet dijon mustard
  • 1 tbsp vinegar
  • 2 tbsps olive oil
  • 4 medium slices bacon
  • 1/4 cup chopped vidalia onion
  • 8 oz mushrooms
  • 1 package spinach
  • 1 serving 1 packet splenda

Directions

  • Cook bacon, remove bacon from pan and let cool. Chop when cool. Reserve grease.
  • Cook sliced mushrooms in bacon grease until soft.
  • Remove mushrooms from heat, add Dijon mustard, vinegar, Splenda and oil.
  • Toss bacon, spinach, onion with mushroom mixture.
