Ingredients
- 1/4 cup chopped vidalia onion
- 2 tbsps olive oil
- 1 serving 1 packet splenda
- 3 tsps or 1 packet dijon mustard
- 1 tbsp vinegar
- 4 medium slices bacon
- 8 oz mushrooms
- 1 package spinach
Directions
- Cook bacon, remove bacon from pan and let cool. Chop when cool. Reserve grease.
- Cook sliced mushrooms in bacon grease until soft.
- Remove mushrooms from heat, add Dijon mustard, vinegar, Splenda and oil.
- Toss bacon, spinach, onion with mushroom mixture.
