  • 1 package spinach
  • 2 large egg whites
  • 2 tbsps parmesan cheese

Directions

  • Drain spinach really well. You can use a potato ricer.
  • Put all ingredients in a bowl and mix well.
  • Spray skillet with cooking spray (such as Pam) or olive oil.
  • Flatten the spinach mix in the pan.
  • Cook for 8-10 minutes on medium heat.
  • If needed, garnish with low fat ranch dressing.
