  • 2 large eggs
  • 1/2 tbsp extra virgin olive oil
  • 3 slices 1 nlea serving ham
  • 1/2 clove garlic
  • 1 medium onion
  • 1 cup spinach

Directions

  • Heat oil in small pan. Chop onion, garlic, spinach and ham.
  • Add onion and garlic to pan, sauté for 2 minutes.
  • Add ham to pan, heat thoroughly.
  • Add spinach to pan, heat until just wilted.
  • Beat eggs lightly, add to pan and cook thoroughly.
