- 2 large eggs
- 1 medium onion
- 1/2 clove garlic
- 3 slices 1 nlea serving ham
- 1 cup spinach
- 1/2 tbsp extra virgin olive oil
Directions
- Heat oil in small pan. Chop onion, garlic, spinach and ham.
- Add onion and garlic to pan, sauté for 2 minutes.
- Add ham to pan, heat thoroughly.
- Add spinach to pan, heat until just wilted.
- Beat eggs lightly, add to pan and cook thoroughly.
