Ingredients
- 1 tbsp extra virgin olive oil
- 1/2 cup water
- 8 oz mushrooms
- 2 bay leaves
- 2 cloves garlic
- 2 medium sweet red peppers
- 1 medium onion
- 1 1/4 tsps salt
- 3/4 tsp black pepper
- 1 tsp adobo all purpose seasoning
- 1.1 lbs beef top round
- 1/3 cup mashed potato flakes
Directions
- Season beef with adobo, salt and pepper.
- Heat oil in skillet, sear beef.
- Add onion quarters to crockpot. Add beef. Add chopped garlic, chunks of red pepper, mushroom halves and bay leaves.
- Mix potato flakes with water. Add to crockpot.
- Cook on low 8-10 hours.
