  • 1 tbsp olive oil
  • 1 peeled eggplant
  • 1 large red pepper
  • 1 1/2 cups flowerets broccoli
  • 6 cloves garlic
  • 1/2 cup soy sauce
  • 1/2 cup water

Directions

  • Peel eggplant and chop all vegetables.
  • Put all ingredients in non-stick pan and stir fry until tender. Cover for short periods if needed to speed up cooking process.
  • Serve alone or over rice.
