Ingredients
- 1 cup chopped zucchini
- 5 peeled baby carrots
- 1/4 cup pieces or slices mushrooms
- 1 cup diced tomatoes and green chilies
- 1/2 cup chopped onions
- 1 tsp minced garlic
- 1 tbsp extra virgin olive oil
- 1 cup flowerets broccoli flower clusters
- 1/4 cup baby spinach
- 1/4 cup arugula lettuce
- 1/4 tsp himalayan pink salt
- 1/2 cup frozen corn
- 3 cubes chicken stock cubes (dry, dehydrated)
- 1 chicken breast, bone and skin removed
- 1/4 cup green bell peppers
- 1/2 cup canned black beans (no salt added)
Directions
- In a large pan, sauté garlic and onions with olive oil until fragrant.
- Add chopped chicken and cook until white.
- Add vegetables one at a time, starting with the hardest ones.
- Put chicken stock cubes and some water. Let it simmer for 10 minutes.
