  • 2 tsps minced garlic
  • 1/2 cup young green onions, chopped
  • 1 1/4 cups diced tomatoes & green chilies
  • 1 3/4 cups tomato sauce
  • 2 cups brown rice
  • 3 medium bell peppers
  • 96% lean ground beef
  • 3 cups beef broth
  • 1/2 tsp ground oregano
  • 1/2 tbsp basil

Directions

  • Brown the ground beef in a skillet.
  • Place all ingredients in a crockpot and cook for approximately 6 hours on low.
  • Note: use yellow, red and orange bell peppers to make the soup more colorful.
