- 1 head medium green cabbage
- 2 cups chopped carrots
- 1 cup chopped red pepper
- 1 cup chopped spring onions
- 6 tbsps extra virgin olive oil
- 6 tbsps vinegar
- 2 fl oz lime juice
- 3 tsps sugar
- 3 servings 1 packet splenda
- 2 tbsps sweet red chili sauce
Directions
- Finely shred the vegetables, mix the dressing ingredients in a bowl with a wisk and pour over vegetables.
- Mix well and let sit, as it droops you end up with more liquid overall. The slight softening is fine since it's crunchy cabbage.
