Sweet Potato and Chilli Soup

Ingredients

  • 2 large onions, chopped roughly
  • 2 cloves garlic, chopped
  • 2 chili peppers, deseeded and chopped
  • 500 g carrots, chopped
  • 500 g sweet potatoes, chopped
  • 6 cubes vegetable stock
  • 1 dash salt
  • 1 dash pepper
  • 1 tbsp vegetable oil spray
  • 4 cups water

Directions

  • Spray the saucepan with oil spray and gently fry the onions and garlic until they turn slightly brown.
  • Add the chillies and fry for another 30 seconds.
  • Add the carrots, sweet potato and stock. Bring to the boil and leave to simmer for 20 minutes or until the vegetables are tender.
  • Liquidize the soup and return to the pan.
  • Season to taste and serve.
