Ingredients

  • 1 5" long sweet potato
  • 1 oz onion
  • 1 large yellow pepper
  • 1 small red pepper
  • 2 medium carrot
  • 6 tsps garlic
  • 12 oz kidney beans
  • 1/2 cup fire roasted crushed tomatoes
  • 1 1/2 cups chunky tomato sauce
  • 1 cup dark red kidney beans
  • 1 tbsp cumin
  • 2 tsps ground oregano
  • 4 tbsps chili powder
  • 1 tbsp olive oil
  • 4 cups vegetable broth

Directions

  • Clean and chop all vegetables into bite size pieces or smaller.
  • Add oil to pan and bring to a medium-high heat. Saute all vegetables starting with the sweet potatoes, carrots, onions and garlic for 7 minutes. Add peppers and cook an additional 7-10 minutes.
  • Add the tomatoes and the rest of the seasonings. Simmer for 5 minutes.
  • Add vegetable broth and kidney beans and bring to a boil, allow to simmer for 20 minutes.
  • Serve adding salt and pepper to taste.
