Ingredients

  • 1 tbsp coriander
  • 1/4 tsp olive oil
  • 1/2 lime's juice
  • 1/2 small red onion
  • 4 medium whole tomatoes
  • 1/2 red hot chili
  • 4 oz black eyed beans

Directions

  • Mix tomato and onion with the beans and olive oil, lime juice, coriander and chili.
  • Note: personally I don't like cold salsa so I cook all of this in a saucepan to soften the onion and other ingredients, but others I know say this is lovely cold.
