Thai Beef Salad with Peanuts

Ingredients

  • 1 fl oz lime juice (2 tbsp)
  • 1 medium cucumber, sliced
  • 1 clove garlic, crushed
  • 1 tsp fresh ginger, grated
  • 1/2 head large iceberg lettuce, shredded
  • 3 stalks green onions, sliced
  • 1 cup chopped red bell pepper, thinly sliced
  • 10 oz roast beef
  • 1/2 fl oz water (1 tbsp)
  • 1/4 cup dry roasted peanuts, chopped

Directions

  • Trim excess fat from beef. Cut into thin strips and place in a medium bowl.
  • Add lime juice, soy sauce, water, ginger, and garlic. Toss to mix.
  • Add green onions, cucumber, and bell pepper. Toss again. Cover and refrigerate at least 1-2 hours, or until time to serve.
  • Place lettuce in a salad bowl. Pour beef, vegetables, and any remaining liquid over the lettuce.
  • Toss together just before serving, then sprinkle peanuts over the top.
