Ingredients

  • 1 tsp sugar
  • 1 tbsp soy sauce
  • 2 cups cooked, diced pork
  • 2 large eggs
  • 1/2 tsp pepper
  • 3 1/2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 clove garlic
  • 1 tbsp chopped green onion
  • 1 cup chopped or sliced tomato
  • 1 cup cooked rice

Directions

  • Beat eggs in a small bowl.
  • Heat 1/2 tbsp olive oil in hot wok, scramble eggs, and reserve.
  • In wok, add remainder of olive oil, onion, garlic, and pork. Cook until browned.
  • Add tomato, sugar, pepper, and salt. Add rice and mix well. Cook for 6-8 minutes.
  • Add eggs and soy sauce, mix well.
  • Note: pork can be substituted with chicken or beef.
