- 1 cup baby spinach
- 1 oz fat free feta cheese
- 5 Kalamata olives
- 1/4 cup chopped red onion
- 1/5 package firm cubed tofu
- 1 tsp canola oil
Directions
- Saute chopped onion, tofu and olives in a pan with the canola oil.
- Add in lightly chopped fresh spinach. Mix in until spinach wilts slightly.
- Mix in feta and serve.
