Ingredients

  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 1/2 cup red lentils
  • 1/2 cup coconut milk
  • 1 tbsp chilli sauce or paste
  • 1 dash salt
  • 1 dash pepper
  • 1 can condensed tomato soup
  • 1 cup crushed tomatoes
  • 4 cups reduced sodium chicken broth

Directions

  • In a pot, heat oil and cook onions until glassy.
  • Add lentils and mix well.
  • Add tomatoes, tomato soup and stock and bring to the boil.
  • Reduce heat, cover and simmer for 45 minutes or until lentils have broken down.
  • Add coconut milk and chili sauce.
  • Reheat and season with salt and pepper.
