- 1 tbsp extra virgin olive oil
- 1 tsp red wine vinegar
- 0.12 tsp salt
- 1/4 tsp coarsely ground black pepper
- 2 medium whole tomatoes, chopped
- 4 tbsps green onions
- 15 1/2 oz great northern beans, drained and rinsed
- 6 cups shredded salad greens
Directions
- In a medium bowl, combine oil, vinegar, salt, and pepper, blending well.
- Add tomatoes, greens, onions, and beans.
- Stir gently until well mixed.
- Serve at once.
