Tomato Avocado Salad

Mixed greens, tomato, avocado and a healthy dressing make this a satisfying meal.

Ingredients

  • 8 cups shredded or chopped bibb lettuce
  • 2 avocados
  • 2 Italian tomatoes
  • 4 oz provolone cheese
  • 1/4 cup olive oil
  • 1 oz lemon juice
  • 2 tsps Dijon mustard

Directions

  • Chop the tomatoes, avocado and provolone and add to the lettuce.
  • For the dressing, mix the remaining ingredients and pour on the salad.
  • Toss well, serve immediately.
  • Note: getting a 4 oz chunk of provolone from the deli is better than using slices. It is chunkier and fills out the bowl better.
