Ingredients

  • 5 medium tomatoes, sliced
  • 2 medium cucumbers, sliced
  • 1/2 medium red onion, diced
  • 10 oz whole wheat rotini pasta
  • 10 tbsps lite balsamic dressing
  • 1 tbsp balsamic vinegar
  • 1 tbsp extra virgin olive oil

Directions

  • Start water for pasta. Slice tomatoes in 1/2 and the into slices. Slice cucumber into slices and dice onion. Add to large bowl.
  • Cook pasta while finishing preparation on vegetables.
  • Drain and rinse pasta to large bowl.
  • Add lite balsamic dressing, balsamic vinegar, olive oil and salt and pepper to taste. Mix well.
  • Note: you can add Parmesan or Romano cheese, but it will increase the calorie and fat content.
