Ingredients

  • 3/4 cup diced tomatoes
  • 1/2 tsp chili powder
  • 1 2/3 cup chicken breast
  • 2 cups chicken broth
  • 2 oz brown rice
  • 1 tbsp cumin
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsps ground oregano
  • 1 medium onions
  • 4 oz green chili peppers

Directions

  • Place chicken, diced tomatoes and chilies in a saucepan.
  • Chop onion and add to pan.
  • Add raw brown rice, seasonings and chicken broth. Cover.
  • Once it boils, lower to a simmer and cook for 20 minutes.
  • Note: cheddar cheese, sour cream or a few tortilla chips can be added for a few extra calories.
